Ingredients

  • 500.0 g Jerusalem Artichokes
  • 2.0 piece Eggs
  • 4.0 tbsp Flour
  • 1.0 tsp Baking Powder
  • 1.0 to taste Salt and Pepper
  • 1.0 drizzle Oil for Frying

Instructions

  1. Grate topinambo and squeeze out excess moisture.
  2. Mix with eggs, flour, baking powder, salt, and pepper until combined.
  3. Heat oil in a frying pan over medium-high heat.
  4. Drop tablespoon-sized dollops of batter into hot oil.
  5. Flatten slightly and fry until golden brown on both sides.
  6. Drain on paper towels.
  7. Serve hot as a side dish or snack.
