- 1.0 kg Pumpkin

1.0 piece Onion

- 3.0 clove Garlic
- 3.0 tbsp Butter or Olive Oil
- 1.0 l Stock or Water
- 1.0 to taste Salt and Pepper
Instructions
- Heat butter or oil in a large pot over medium heat.
- Add garlic and onion, brown until softened.
- Add pumpkin cubes and sauté for 5 minutes.
- Pour in stock or water, bring to a boil.
- Simmer for 20 minutes until pumpkin is very soft.
- Blend until smooth using an immersion blender or food processor.
- Return to heat, bring to a boil again.
- Blend once more for extra smoothness if desired.
- Season with salt and pepper.
