Ingredients

  • 1.0 kg Pumpkin
  • 1.0 piece Onion
  • 3.0 clove Garlic
  • 3.0 tbsp Butter or Olive Oil
  • 1.0 l Stock or Water
  • 1.0 to taste Salt and Pepper

Instructions

  1. Heat butter or oil in a large pot over medium heat.
  2. Add garlic and onion, brown until softened.
  3. Add pumpkin cubes and sauté for 5 minutes.
  4. Pour in stock or water, bring to a boil.
  5. Simmer for 20 minutes until pumpkin is very soft.
  6. Blend until smooth using an immersion blender or food processor.
  7. Return to heat, bring to a boil again.
  8. Blend once more for extra smoothness if desired.
  9. Season with salt and pepper.
