Ingredients

  • 2.0 head Pak Choi
  • 1.0 sprinkle Fresh Herbs (parsley or thyme)
  • 1.0 l Vegetable Stock
  • 1.0 tbsp Olive Oil
  • 1.0 to taste Salt and Pepper
  • 1.0 piece Onion
  • 2.0 clove Garlic

Instructions

  1. Heat olive oil in a pot, sauté garlic and onion until softened.
  2. Add vegetable stock and bring to a boil.
  3. Add pak choi and simmer for 5-7 minutes until tender.
  4. Season with salt, pepper, and fresh herbs.
  5. Serve hot as a light soup.
