Wash the coloured chard, separate the stems and leaves. Cut the stems in small cubes and cut the leaves medium size. Put them in different bowls.
Cut the onion in small cubes.
Heat a medium size pot. Add some olive oil. Add the onion cubes, sprinkle a bit of salt to help to cook. And stir till the color changes a bit. Then add the stems of the chard. Stir a bit. Put the lid and lower the heat. Let them cook through, stirring every once in a while. Until they start to caramelise.
Add the leaves of the chard. Turn the heat up a little to help them cook.
Once the leaves got smaller. Add the pre cooked white beans on top. Stir them together for couple of minutes. Then add water to cover.
Add the crushed garlic, chilly (or chilly flakes or smoked paprika) and salt & pepper. Bring it to boil. Then lower the heat & let it simmer about 15 mins.
Turn the heat off add the lemon zest, mix well. After letting it rest for 10 mins, ready to serve.
